We have Starbucks at home! Prep these sandwiches for work or school and skip the drive-thru.
I love a Bacon Gouda Egg Starbucks sandwich more than most. ESPECIALLY when I was pregnant. I often considered ordering two but tried to show some sort of restraint. After having a baby and realizing how hard it was to get out of the house in the morning and how expensive it all was, I decided to make them at home.
Save money and time every morning.
I prefer freezing the sandwich over keeping it in the fridge because I feel that it preserves the taste better. It may take slightly more time in the morning, but I think it's worth it. Freezing also allows you to prep a whole month's worth at a time if you'd like to!
Big Gouda Energy Breakfast Sammies
Ingredients
4 ciabatta rolls
6 eggs
1/8 cup milk
1 teaspoon salt
1 teaspoon pepper
4 slices of gouda
4-6 slices of cooked bacon
Directions
Preheat oven to 350 degrees. Whisk together the eggs, milk, pepper, and salt. Place mixture into square baking dish (8x10 or 8x8 works well). Bake for 20 minutes or until eggs are cooked through.
Once eggs are done, cut into fourths. Slice ciabatta rolls in half. Tear slices of cooked bacon in half (I like to cook mine in the oven at 400 degrees.)
On half of ciabatta roll layer egg, gouda, and bacon. Top with the other half of ciabatta. Microwave for 15-30 seconds to get cheese nice and melty. Enjoy!
To Freeze: Wrap each sandwich individually in parchment paper and place into a gallon freezer ziplock. Freeze for up to one month. To reheat, microwave sandwich on 50% power for 30 seconds. Separate bread from the egg, cheese, and bacon contents and microwave those alone for 2-3 minutes on 50% power. You may need to add an extra 30 seconds on full power depending on your microwave. Give the bread alone another 15-30 seconds in the microwave, assemble sandwich, and enjoy!
