Lazy Picadillo Tacos

All the flavor without all the time. Try my Lazy Picadillo tonight!

I grew up seeing my grandmother make picadillo and loved the way it made the whole house smell warm and inviting. It is my favorite dish that she makes. Over the years, I've crafted my own version that comes together in just under 30 minutes.

Comforting and Filling

Some may say this isn't authentic picadillo and I'm okay with that! I love the authentic version but after having a kiddo I needed something fast and easy! I may take a few shortcuts but it still provides a nutritious and cost-effective meal and that's what's most important to me.


Lazy Picadillo


Ingredients


  • 1 pound of ground beef

  • 1 packet of taco seasoning

  • 1 medium russet potato, peeled and diced

  • 1/3 cup of salsa

  • 1/4 cup of water

  • 6 tortillas-corn or flour

  • shredded cheese for topping-optional



Directions


  1. Place diced potato into a pot, add water until the potatoes are covered with two inch clearance. Sprinkle a dash of salt in. Turn heat to medium. Brown ground beef in separate pan, add salt and pepper to taste.

  2. Once ground beef is cooked through, drain, and add taco seasoning packet. Take potatoes off heat when they still have a bit of firmness to them, but are overall soft.

  3. Combine potatoes, salsa, and water with ground beef. Set to low heat and simmer for 15-20 minutes or until potatoes are completely cooked.

  4. Serve on a tortilla and top with cheese. Enjoy!

You can add lettuce and tomato on your tacos! Also if you would like to stretch this meal further, add more potatoes.
