A quick, easy, and cheap freezer meal, what's not to love!
I love El Pollo Loco's BRC burrito, so I decided to recreate it. While creating this recipe, I discovered that it is a great freezer meal! Easy to reheat and tastes just as delicious as freshly made.

If you are new to freezer meal prep this is a great place to start. Only a few ingredients and an under 30 minute prep. This is perfect as a work lunch too!
Freezer BRC Burritos
Ingredients
8 large tortillas
1 14.5 ounce can of pinto beans
1 tablespoon borracho bean seasoning-optional
2 cups spanish rice- you can check out my recipe here
1 cup shredded cheese
Directions
Directions should always be short and to the point.
Mix the pinto beans with bean seasoning if desired.
To the center of the tortilla add 1/2 cup rice, 1/4 cup pinto beans, and as much cheese as you prefer I like to add 2 tablespoons.
Roll up the burrito and wrap in saran wrap, then foil. Label a gallon storage bag and freeze for up to a month.
To defrost, microwave at 50% for two minutes turning halfway through. Then cook for an additional 1-2 minutes on high or until internal tempeature reaches 165 degrees. Optional, brown on both sides on a comal for a crispy outside.
