Chalupas have been a staple in my dinner rotation since I can remember. There is a home video of me as a toddler eating these for dinner. I even made chalupas in my college dorm! It's a dinner that works for every stage of life.
A quick dinner that allows for more family time.
This dinner isn't only time-saving it's cost-saving as well! It takes just a few ingredients that you probably already have in your pantry. Depending on how many you are feeding, you only need 1-2 chicken breasts or 1-2 cups of shredded chicken to feed everyone!
Cheesy Crunchy Chicken Chalupas
Ingredients
Makes 4 servings of 3 chalupas
12 chalupas (I like the big stack of mission brand)
2 cups of shredded chicken
1 can of refried beans
1 chopped roma tomato
1 cup shredded lettuce
1 cup of shredded cheese
1-2 avocados sliced (optional)
Directions
Heat oven to 350 degrees. I like to use the toaster oven because I put the chalupas directly on the rack to get them nice and crispy. I would be too nervous to do that with the regular oven! Heat the refried beans for one minute in the microwave and stir. Spread a thin layer over the chalupa shells.
Top chalupas with shredded chicken, and cheese.
Bake until cheese is melted, remove from toaster oven. Top with lettuce, tomatoes, and avocado if desired.
