Thai Crunch Salad (CPK Copycat)

A unique salad that is sure to become your favorite!

The first time I tried the Thai Crunch salad at California Pizza Kitchen, I was delighted. A light, crispy salad with hints of sweet and tangy, it was my go-to for years. Recently, the California Pizza Kitchen in my hometown shuttered its doors. I was beside myself when I learned about its closure. In honor of that lovely restaurant I decided to recreate this salad.

Crisp, Unique, and Delicious

Once the chicken is baked, this salad comes together in less than five minutes. It's great as a lunch or dinner with a slice of pizza on the side!


Thai Crunch Salad


Ingredients


  • 1 avocado sliced into cubes

  • 1/3 cup wonton strips

  • 1/2 cup shelled edamame

  • 1 chopped baked chicken breast

  • 1/3 cup California Pizza Kitchen Thai Crunch dressing

  • 1 package super blend bagged salad (mix of brussel sprouts, napa cabbage, kohlrabi, broccoli, carrots, and kale)

Directions


  1. Add to a bowl salad mix, baked chicken breast, edamame, wonton strips, and avocado and lightly mix.

  2. Add Thai crunch dressing and toss salad.

  3. Enjoy!
