Encourage your kiddos to eat their vegetables in a creative way with these meatballs!
I wanted to make something for my kiddo that included both protein and vegetables and froze well. I started experimenting in the kitchen and came up with this recipe. When I first took the meatballs out of the oven I thought to myself, no one will want these it looks like they are covered in melted crayon!

But then I realized, most kiddos would love to eat something that looks fun and exciting! So I stuck with the idea and named them Melted Crayon Meatballs. These come together so quickly and freeze extremely well. It makes dinner so much easier for the whole family. If feeding to younger kiddos make sure to break up the meatball into small pieces before serving!*
"Melted Crayon" Veggie Meatballs
Ingredients
This will make about 8 large meatballs. I use 2 at a time for my kiddo.
1/2 pound of ground beef
1 small carrot peeled and shredded
1 egg
1/2 of a yellow squash shredded
2 tablespoons shredded cheese-any kind is fine
Directions
Preheat oven to 375 degrees and grease a small baking sheet
Combine ground beef, egg, carrot, squash, and shredded cheese together in a bowl. Form the mixture into eight equally sized meatballs and place on the baking sheet.
Bake in the oven for 25-30 minutes or until internal temperature reaches 165 degrees.
Enjoy!
You can also store these in the freezer for up to a month. I store these in pairs of two in a vacuum sealed freezer bag to make for easy lunches and dinners.
