A classic, quick breakfast that is always delicious.
I grew up eating migas, and I think everyone should be enjoying them in their home! My husband and I made this during a camping trip and everyone loved it! One of our friends even made it for his parents the next weekend.

This breakfast dish is so quick to put together and only a couple ingredients. It's cost-effective for a large group and could be make for one person too!
Mouthwatering Migas
Ingredients
This recipe serves two:
12 corn tortillas
1 tbsp cooking oil
3 eggs
1/3 cup shredded cheese
avocado slices for topping (optional)
Directions
Heat the oil in a pan to medium heat.
Once oil is warm, place tortilla strips in pan. Flip strips to ensure they are coated in oil evenly.
Toss strips as needed until they are crispy. Scramble eggs, add pepper and salt if desired and place into pan with strips.
Flip tortilla and egg combo in pan until eggs cooked through. Add cheese if desired on top and allow to melt.
Optional, serve with a side of sliced avocado. Enjoy!
Note: I like to do a ratio of 3 tortillas to 1 egg, if you prefer less egg I would do a 4:1 ratio!
